Hello folks! It's been a very long time since I've made a BLOG entry. Business has been OK, I'm wondering where all you people went?!? Don't get me wrong, I do see a lot of the same faces all the time(Thank you so much!!), but there are also a lot of faces I haven't seen in a very long time!! Now I don't know if any of you read this or not, but I would like to share some information about some of the thing we do here. For instance, EEL sauce. I've heard that many restaurant used bottled eel sauce. Here at Taiko, we make our EEL sauce from scratch. Most of you probably know this because a couple of months ago it wasn't as thick(not on purpose, just couldn't get it right), but we finally, after many trials, have come up with a process. I'd like to explain how this process is done, for it is a long and grueling process.
First, we must make a base for the sauce. This consists of EEL and fish bones. A very large pot is then filled with water, EEL and fish bones are added then simmered for the next 72 hours. Once that is finished and the stock is strained, then sweet sake is added(Mirin) then reduced to half(takes another 24 hours). Soy sauce is then added and reduced again to half(takes yet another 24 hours). When all this is done we add sugar. Now I don't want to turn anyone off of EEL sauce so I won't say how much exactly, but I'll tell you the weight is a triple digit way over 100 so...... but that's what makes it SO good~~~! That and all the love that goes into for 6 long days!!! I just got done making a batch of EEL sauce and it has and always will be a grueling thing to do, but it's what we do.
